Ingredients
  1. 2 lbs. of extra lean beef stew meat
  2. 2 to 3 large potatoes, cubed
  3. ½ teaspoon of olive oil
  4. 1 large onion, chopped
  5. 2 celery stalks, diced
  6. 2 carrots, diced
  7. 1 tbs. of parsley
  8. 3 cloves of garlic, minced
  9. 1 bay leaf
  10. 4 cups of beef broth
  11. 3 scallions, chopped
  12. 2 14.5 ounce can of string beans, drained
  13. 1 small can of corn niblets, drained
  14. 1 package McCormick Beef Stew Seasoning Mix




Procedure/Direction:
In large skillet, flour and brown meat in hot oil.

Place meat in slow cooker.

Pour stock into a sauce pan and bring to boil.

Par boil the celery, garlic and onions for 2 minutes.

Pour beef stock and vegetables into the slow cooker.

Add herbs, cover and cook on low heat - DO NOT BOIL – for 4 to 8 hours.

Remove bay left before serving.
