Ingredients

2 lbs. of extra lean beef stew meat

2 to 3 large potatoes, cubed

½ teaspoon of olive oil

1 large onion, chopped

2 celery stalks, diced

2 carrots, diced
-
1 tbs. of parsley

3 cloves of garlic, minced

1 bay leaf

4 cups of beef broth

3 scallions, chopped

14.5 ounce can of string beans, drained

1 small can of corn niblets, drained

1 package McCormick Beef Stew Seasoning Mix
Procedure/Direction:
In large skillet, flour and brown meat in hot oil.
Place meat in slow cooker.
Pour stock into a sauce pan and bring to boil.
Par boil the celery, garlic and onions for 2 minutes.
Pour beef stock and vegetables into the slow cooker.
Add herbs, cover and cook on low heat - DO NOT BOIL – for 4 to 8 hours.
Remove bay left before serving.
